Cheap DorkFood DSV Temperature Controller for Sous-vide

For several years I've been hankering for an immersion circulator to try sous vide cooking at home. I didn't have the $2000 plus for a complete PolyScience unit, or even the $900 or so for a pro quality circulator head. So without expecting too much, I bought the oddly, sweetly named DorkFod DSV Temperature Controller and teamed it up with a 7 quart manual crock pot I found on sale at a local discount store for $19.
Much to my surprise, the combination totally rocks. The DorkFood unit is solidly built, easy to use, and holds the temperature I set within about 0.2 degrees Fahrenheit. The natural bottom to top convection of the crock pot, even without an additional circulator, has provided even heat for my sous vide creations. If you've never had leg of lamb cooked under vacuum for 36 hours you don't know what you're missing: a mild, non-gamy flavor with the buttery texture of filet mignon. Lobster tails cooked with garlic butter unbelievably tender and sweet. Restaurant quality duck confit becomes child's play! Cure duck legs (with thigh) overnight with salt, thyme and crushed juniper berries rinse and pat dry the next day seal under vacuum with 1 tablespoon of rendered duck fat per leg and cook at 167 degrees for 30 hours or more for the most succulent duck you've ever tasted. After cooking I cut off the skin and fry it under a cast iron weight (affectionately known as a "pig") and top the duck leg with a crispy duck bacon "cracker."
There are so many free resources on-line and great books at Amazon for sous vide coooking it's easy to get started. And for a total of $118 including the crock pot DorkFood exceeded my expectations. Although I have a good vacuum sealer (VacMaster VP112) many sous vide dishes can be prepared using carefully sealed freezer quality ZipLoc bags. This product really lowers the bar for getting into the wonderful world of sous vide. Nature may abhor a vacuum, but adventurous chefs love it!
Small hint: Whole Foods and some other stores will vacuum seal your meats if you ask nicely with a smile :)
The device may look a little intimidating at first, but its actually very simple to use. It also comes with a small handout that has instructions and pictures for setting it up. The unit is a little industrial looking so I'm happy that its small enough to put away out of sight after I'm done cooking. I hope the company makes a "prettier" version of the device soon.
But my absolute FAVORITE part about the DSV is that it allows you to transform your existing kitchen devices... those that have been sitting unused in the kitchen cabinets gathering a thick layer of dust... into a fancy state-of-the-art sous vide machine that is just as good as the $500+ models.
I would highly recommend this product to any of my friends and I'm getting my parents one for Christmas this year. It would also make a very unique wedding present or a cool gift for the aspiring chef in the family.
The unit is very easy to setup, make sure your Crock Pot has a mechanical temperature switch, not electronic. Kept the water at the perfect temperature for the entire cooking time. Preheated the water for 1 hour before to let the unit calibrate. Would highly recommend.

Worries about uniform food thickness are unfounded for home cooking. That's for chefs who must produce many meals in a limited time. No part of the food can ever be overheated. Texture differences in thin areas from a few more minutes at target temperature are imperceptible. Flavors are intensified. Use less spice and seasoning.
Despite a few overwrought reviews, my Dork works perfectly. Unless you sleep in the kitchen, concerns about the clicking are ridiculous. Put on some music in the living room and it's unnoticeable. It holds 1ยบ over the displayed temperature according to a reliable stick probe. I normally preheat the water in a fast electric kettle. Then the Dork powers the crock heater for a few seconds 3 or 4 times/minute. It doesn't heat up the kitchen and that's a big deal in Florida. Like running a 20 watt bulb, the power costs a penny for 3 hours of cooking.
The only valid issue with this approach to sous vide is the use of low-power heaters. The cooking water should be up to target temperature before introducing the food, which will cool it. This can be a long wait with a 100 200 watt crockpot like mine. So preheat the water quickly in a pot or kettle, much hotter than cooking temperature. The crock has to be heated too. Then adjust with a little tap water to the target temperature and off you go. With a few tries, you will hit target temperature in 5 minutes with very little fuss. The Dork helps by constantly displaying the actual water temperature.
The general problem with sous vide is long cooking times. With a nice controller like the Dork, it doesn't have to be your time. Go outside for some sun, fresh air, and exercise. Dinner will be perfect whenever you get back.
I have tried this with a 4QT slow cooker/crock pot and with a Oster 14 cup rice cooker. Either works fine.
It takes a long time to "settle" on your selected temprature, even if you pre-heat the water. For example, if I set the temp to 140F, often it will hold at about 145F after about 30 min and takes quite a while to come back down. The temprature on the unit and the temp as read on a separate thermometer are exactly same, generally about 5 degrees too high. Odd, but after a couple of hours it will generally "settle" at the selected temp. I can work around this by either intentionally setting the temp lower than desired or just wait however long it takes for it to settle at the selected temp.
They claim the device can maintain the temp at +/.25F once the unit settles on the selected temp. I have found that to be spot on, once settled it never deviates.
Overall, I am very happy with this purchase. I hope it lasts a long time!

I am so happy that there is finally an affordable solution out there for the rest of us. We frequently have dinner parties and sous vide is a super easy way to cook an amazing meal for many people. I use it a lot to cook fish and steak, but we have also used it for chicken, lamb, and even veggies. Very simple tool to cook via the Sous Vide method. Did four filets with butter and salt in the bag. 135 degrees for 2 hours, a very quick sear at the end. Amazing results, may be the one of the best steaks I've ever had.The unit is very easy to setup, make sure your Crock Pot has a mechanical temperature switch, not electronic. The DSV is a fantastic way to get into sous-vide cooking without spending a ton of money. I looked at several DIY options, but I don't think they are very cost effective, nor safe unless you really know what you're doing (and I don't).I have tried this with a 4QT slow cooker/crock pot and with a Oster 14 cup rice cooker. We've had ours for one month after the cheapo plastic one died. I investigated multiple other high-end electric kettles, including Cuisinart, Chef' Choice, Krups, Braun by reading reviews on-line and comparing them @ the local bricks & mortar stores. The Breville is clearly the best designed one for the money.
Pros:
clean, beautiful design which is also easier to clean.
hefty, substantial base unit with place to wrap around the cord
boils quickly in 4 min. for full 1.5 L
more substantial kettle than more expensive models by Chef's Choice or Cuisinart. The Chef's Tools electric kettle @ the same price point looked flimsier. In fact, the floor model Chef's Choice kettle was no longer closing or opening its lid properly-always a bad sign when a floor model falls apart.
modest yet easily audible "ping" sound when the water has come to a boil, and the kettle shuts off automatically.
the outlet is easy to pull due to the hollow center design

occasionally, there's a metallic taste in reboiled water if the water was left inside the kettle for several hours. However, the water tastes fine if you boil a pot from freshly filled water.
Overall, clearly the pros outweigh the cons. We're heavy users of the electric kettle, especially in the winter, boiling water for teas, soups at least 4-5x per day. We'll report back again in a yr after the warranty expires.
UPDATE > 1 yr after post (4/6/08): The Breville Ikon is still going strong. The water seems to be taking a slightly longer time to boil. We still use it 3-4 times per day, and it works well.

Being an extremely convenient home appliance "discovered" by the Europeans decades ago, and later in the USA, the electric kettle always left one concern: compared to its mundane predecessor it was typically made of plastic inside and out. Which could potentially mean various unhealthy substances emanating into the water from the plastic sides, especially at high boiling temperatures. This one is made of stainless steel and doesn't cause any such concerns.
2. The kettle can be rotated on its cordless base, which makes it easier to put it back on the base than some other models.
3. It has a transparent wall segment to measure water level. While this "window" is not located optimally (somewhat shadowed by the handle) and hasn't got a bright floating level marker, this design is sturdier than some others, and is less prone to leaks.
4. Blue back-light that goes on and lights this "window" when the kettle is switched on, is a nice touch. It both attracts attention and simplifies reading the water level.
5. It's easy to open the lid, and the opening is wide to add water with no problems or dripping. (In some models the handle partly covers the lid, making it hard to open and/or add water.)
6. Like in most up-to-date models, the heating spiral is NOT located inside the boiling case, but rather underneath it, which makes the design more relaible, and it is also much easier to wash the kettle inside if need be.
7. Time to boil is reasonable and not worse than average.

4. Reviewers of other kettles have suggested that the device may leak if water is left overnight. Have not had that problem with this, but then again, we empty it at the end of each day.

Before purchasing, I looked at the competition in stores, and a friend has "another leading brand" competetor; this seemed superior to the others in virtually every way (particularly build quality, the others I'd seen seemed rather "cheap" despite their price). Definitely recommend; this is a winner in our office; several people have already bought their own!
Interestingly, I bought another cordless kettle at Target about the same time, a cheap chrome one by Aroma, for my office. That pot, though smaller, does just as good a job for 1/3 the price, and the finish has stayed nicer. The smaller spout does not release as much steam. But it doesn't LOOK nearly as cool. Ha.
And here's a comment apropos of nothing: why can't the makers of these kettles make one with a stainless steel LID? If we don't want a plastic pot, why would we want a plastic lid? It boggles the mind. But try to find a decent pot with a stainless lid.

First off, Amazon's part in this was excellent. The product arrived in good shape and ahead of schedule. The kettle itself was well-designed and of excellent quality. There, however, is where the problem started. On opening it, there was a heavy, oily smell. This is not unusual for steel items, so I went about boiling a couple of kettles as recommended in the instructions. After the sixth time, the oily smell was still present, and was strong enough to contaminate the tea. I even tried boiling a water-white vinegar solution and leaving it overnight according to the instruction to no avail. I recently bought this product, which has performed flawlessly so far. But two things I've noticed are valuable pieces of information for those planning on buying an electric cordless kettle, I think: First, the water gauge is behind the handle, which means you can't see the water level as you're filling the kettle, since you're holding it by the handle. This problem is not unique to this kettle, but it is an annoyance. I've learned about how much water it takes to fill my 16 oz. mug (a count of five), so I don't need to try to look at something that's underneath my hand as the water is running from the faucet. Maybe they're assuming you're going to be using bottled water and won't need to be holding the pot as you're filling it! My other caution is the very large, dripless spout. The dripless part is great, and it is truly dripless. However, it's also very large, so that a TREMENDOUS amount of hot steam escapes as the pot heats up. You really need to move the pot out completely away from any walls or cupboards or the steam will quickly ruin the finish. But if you move the pot out toward the edge of the counter, the hot steam may burn you, you spouse, your child, or your cat who suddenly decides to jump up on the counter. You really need to stand by the pot as it is heating up if you have pets. I have also noticed that our hard water is already leaving deposits on the bottom of the pot in just a few weeks, but that is my cleaning problem, not a problem with the pot. Another reviewer pointed out that the beautiful brushed finish does not stay beautiful very long no matter what you do, and I have to second that, but it doesn't bother me that much.Interestingly, I bought another cordless kettle at Target about the same time, a cheap chrome one by Aroma, for my office. That pot, though smaller, does just as good a job for 1/3 the price, and the finish has stayed nicer. The smaller spout does not release as much steam. But it doesn't LOOK nearly as cool. Ha.
And here's a comment apropos of nothing: why can't the makers of these kettles make one with a stainless steel LID? If we don't want a plastic pot, why would we want a plastic lid? It boggles the mind. But try to find a decent pot with a stainless lid.

We purchased and received this machine about a month ago from Amazon.com. Since then we've enjoyed using it. Set up was a breeze...nothing difficult to assemble. We wiped everything down to sanatize it and popped our first batch. While our first batch as decent...we had quite a few unpopped kernals (we didn't use enough oil) and have had to refine our technique a bit. The machine itself seems to be of decent quality for $200 bucks. It's worked just fine and we have absolutely no complaints at this point.
This is what we've learned in the past month that may be of use to others. If you don't use enough oil you'll end up with a lot of unpopped kernals. We use about 4 TABLESPOONS of oil with 1 cup of popcorn and it seems to be the perfect combination. One cup of popcorn weighs about 7 ounces and that's the perfect amount for my wife and I.....yes we do love popcorn. If you're not as much into popcorn as we are....you could probably give a nice treat to 4 or 5 people with one cup of unpopped corn and 4 tablespoons of oil.
One thing we'd highly suggest is that you use a product called "Flavacol" which is basically butter flavored salt. You add it right to the oil in the pot before adding the popcorn. We used about a level TEASPOON for one cup of unpopped popcorn and it was about right for us. It's the product that two movie theaters use that we asked....that's how we found out about it. It definately does give your popcorn that "movie theatre taste" we all know and love. We couldn't find Flavacol around town here....so we found you can order it from Amazon or Ebay or probably a number of other places as well. It's cheap...so no worries about the cost.
Buy this machine and go forth and enjoy !

It's too bad really, I had high hopes that this was going to work for my family. The kids were able to use the last one we had but this one is too much trouble for them to even mess with. For the $225 (with shipping) I spent, I can't say I could recommend this model to anyone else.

Popcorn tastes as good as the machine looks. It is really an afordable way to go for a small store, church or such. We had used it at our local church for family video showings. I read the reviews for this and other 8 oz popcorn machines and decided that this popcorn machine would be a good value for the money. I think I was wrong. The first issue is with the drop down door, when opening the glass doors, it always falls off of the 2 little slots for it. Maybe I can install a couple of hinges to hold it in place. The second issue is with the kettle itself. It doesn't fit the 2 brackets hanging down very well. Also, the lids on the kettle flip up and do not fall back down as the popcorn is popping and about half of the kernals come out without popping. It may also be the depth of the kettle (it isn't much deeper than the 4 oz popper I had before this), I don't know. We play poker every weekend at our house. We thought this would be the perfect item to have for snack while we played. So far (1 month) it has been the greatest. The house smells like popcorn when the players arrive and the taste is unbelievable. We make two batches and it fills 10 adults for 3 hours of playing. Review of Total Chef 5 Tray Food Dehydrator
Enjoyed using this magic chef dehydrator for many years to dehydrate, fruit, vegetables and meat perfectly for backpacking meals, but even with rotation of trays and careful cleaning, over time and with repeated usage the trays will begin to warp and crack. Dehydrator tends to have hot spots, plus plastic dehydrator trays and liners absorb tomato-based products causing them to be permanently stained. Replacement trays are no where to be found so will have to buy a new dehydrator.

This dehydrator works very well. You must be home to rotate the trays both in stacked positions and location on the base. Yes indeed this 1 is the one! It works well beyond what I need and I use this 2x a week to make chicken jerky for my Yorkies. The heat and fan coming from the bottom is the key. The 1 I had before this was a top heat and it started on fire. I kid you not, talk about scary. It has not increased my electric bill running for 6-8 hours at a time either. They say not to put the trays in the dishwasher, but I do on the light setting top rack only for trying to hand clean in between the small grooves even after soaking in hot water, does not work and get all the residue off. That is the only drawback. If I were to do fruits and veggies would not be a big deal to me, but I do chicken , so need to have it super clean. I highly recommend this one for its' quality design with how it dehydrates.Karla Z

Wish it came with a bottle of water treatment though.I saw there were no reviews for this waterbed so I bought it taking a chance(big mistake). This waterbed comes with no instructions and no fill/drain kit so I had to wait another three days to buy a separate kit. It came in a very sketchy cardboard box that looked like it had been through a hurricane. I filled it up 2 days ago and noticed this morning that my waterbed tarp was soaking wet. My first two tankless water heaters did not have this device I learned the hard way that there is calcium or lime (or both) in my water here, and it destroyed the canisters in the first two heaters. They cracked and the corrosion was evident on their exterior surfaces. For my third tankless, I had the plumber install a T-pipe where this filter is installed. I've used them for the past year or so, changing them every 6 months. It's like insurance for the heater. So far, so good!

The first one I tried to screw in, the first thread stripped and I couldn't get it to screw in straight. Be very careful as the threads are soft plastic. So I had to throw that one away and carefully screw in the second one. No idea if this actually does anything. i use this at work for myself and a few friends. We make two pots a day and the coffee maker has worked perfectly for a few months now. Its pretty quiet, but the coffee tends to be very hot! the longer it sits in the coffee maker the hotter it gets. Overall, i'm very happy with it.
We used our BrewStation for the first time yesterday. The night before, I set it up and programmed it to make coffee at 5:00 AM perfect, we could get up and have coffee already made. It worked great. A minor problem is that I enjoy coffee throughout the morning and the coffeemaker shut off after two hours. Not a big deal in the grand scheme of things, I just turned it back on and life was good.
Now before I go on with my story, I need to explain how this coffeemaker works. You pour the water into the first reservoir (for water only) using the coffee tank to measure the amount of water. The coffee tank is placed back on the coffeemaker and the coffee filter and coffee is placed in a basket that fits on top of the coffee tank. The coffee is made and held in the coffee tank. To dispense the coffee, you place your cup below the tank and push on the dispenser button with your cup. Coffee pours right into the cup. Great idea, too bad it doesn't work as well as the concept!
Today coffee was brewed at 5:00 AM again. That's the only thing that worked well. When my husband tried to get a cup of coffee it poured out and would not stop. The cup overflowed, the coffee ran all over the counter and continued to flow until he unplugged it and put the entire coffeemaker in the sink. It finally stopped pouring out when it ran out of coffee. I've cleaned the coffee tank and it continues to pour no matter what I do. Since this coffeemaker runs just under $ 50, the twelve cups of coffee we've made with it very expensive!
I've emailed Hamilton Beach and am awaiting an answer to this dilemma. I need to purchase another coffeemaker today and it definitely won't be a Hamilton Beach brand. I can't afford to purchase a new coffeemaker every other day!
My advice is to purchase a different brand and stay away from this one. Unless you don't have cups and want to slurp your coffee off of the counter!
This coffee pot lets you dispense coffee one cup at a time. You still brew it a pot at a time, however, it dispenses the coffee one cup at a time as you need it. Just press your coffee cup against the silver button (kind of like a soda machine at a restaurant). The coffee stays inside of a removable bucket and is kept comfortably warm.
I haven't had a single drip from this unit that wasn't as desired right into my cup!
One advantage that was unexpected was that this unit is kid-friendly. We never considered asking our 8 year old son to get us a cup of coffee because the weight of a full pot of steaming hot coffee would be too dangerous. However, without a carafe, this isn't an issue. Our son is perfectly comfortable with pushing a single cup against the silver button to dispense one cup at a time. Ahhhh!
Finally convenience. This machine couldn't be much easier to use. There is a large plastic bucket with a handle that sits inside the unit. Just pull up the handle and fill it with water and dump the water into the unit. Then, put the bucket back in. Add a filter and push the "On" button. There ya go. To clean it, just remove the bucket. In the days of latte and frapuccino, there's something refreshing about drinking out of a bucket!

I've had this coffee maker for almost a year now and I have no problems with it. I have the black one (white and silver are available) and the plastic water indicator does get stained by the coffee but cleans off easily. The inside metal plate should also be kept clean daily, simple wipe down helps both metal warming features stay clean. There is one important item to mention during cleaning, to avoid drips you should open the trigger & let warm water run through it, where the coffee drips or you will end up with leaks when the cup is pulled away because the trigger will stick (from old coffee). Finally, I use the programming feature dailyand I find it is easy to program in different times (if needed) and it has a good indicator letting you know it is already set. I recieved one of the defective ones. It frist started with no current to the coffee maker .By unplugging and plugging back in several times ,I would finally get the clock blinking again .Then its other symptoms of the faulty electrical supply ,it would stop making coffee when only a 1/3 of the pot was brewed ? I would have to restart the brewing process at least 3 times B/4 a fulll pot was brewed ! Hamilton Beach seems to think everyone has a back up coffee maker laying around .They tell you to cut off the cord and send it to them and if you are lucky you may have a new one in 3-4 weeks. In my case I would have to go out and buy a second pot ,while waiting for my replacement ! Thanks to customer service from amazon.com ,they have come up with a differant way to make this customer happy. If I had it to do all over again ,even though I like the potless design of the Brew Station ,I would wait till someone else made a more reliable and better quality built machine ! When they sent me the instructions to cut the cord and mail it to them along with shipping charges for the new maker, I was left speechless and now to find out this is a factory defect ,on what appears to be on a significant amount of these coffee makers ,I believe they have alot of gall making the comsumer pay anything ,for replacement. Has Hamilton Beach ever heard of the two words "class action" ! I will never buy another Hamilton Beach product again. I thank amazon.com for great customer service !Sincerely Nick

I purchased two of these heaters brand new and both cannot have the second tube lit up (the advertised 1500w setting) without overheating and shutting off less than a minute later. This is with them sitting in the middle of two cold rooms, one being the garage with its own breaker box.
These are obviously built poorly and untested afterwards. There is no possible way these are safe to use.
Might as well add that the 750w setting does not overheat being left on, but the heat it puts out is useless for the size of this thing. Its big, and to only be putting out the heat of smaller units, its useless.
I personally will not buy another Comfort Zone product because these were so disappointing.

This is the second order for the same model thermostats. The first was correct and is working as expected. The second order though for the same model, had a lower model shipped. The outcome, my heat did not work for a couple of weeks while I wrestled with the manufacturer who is not customer oriented. I will reuse the ETD620W1 shipped in small rooms and try to get the correct ETD620W2 model shipped this time. This could have been a catastrophe.
